Festive roast beef with cranberry sauce and winter vegetables

Tender meat of the best quality meets fruity cranberries, fresh vegetables
and a fine red wine sauce – a dish that brings warmth and enjoyment to the table.
🛒 Ingredients (for 8 portions)
- 1.5 kg beef balls (from our Bauch butcher’s shop)
- 2 kg potatoes
- 10 small carrots
- 3 onions
- 2 garlic bulbs
- 2 tbsp olive oil
- Salt & pepper
- 1 packet of fresh herbs
- 50 g dried cranberries
- 1 clementine
- 1 tsp flour
- 200 ml red wine
- 200 ml beef stock
- 4 tbsp cranberry sauce
- 1 broccoli
- 1 pack of green beans
- 1 packet of mangetout
- 100 g peas
- 20 g butter
- 1 untreated lemon
- 1 sprig of rosemary
👩🍳 Preparation
- Preparing the roast:
Take the meat out of the fridge 30 minutes before roasting and tie evenly with kitchen string.
Preheat the oven to 230 °C (top/bottom heat). - Prepare the vegetables:
Peel the potatoes and carrots and cut into pieces.
Halve the onions and garlic and place everything in the roasting tin. Season with salt and pepper. - Prepare the roast:
Place the piece of beef on the vegetables, drizzle with olive oil, season and place in the oven for 15 minutes.
Then lower the temperature to 200 °C and bake to the desired degree of doneness:- 1 hour for medium (core temperature 65-70 °C)
- 1.5 hours for fully cooked
- Flavoring:
After 30 minutes, roughly chop the herbs, slice the clementine
and add both to the roast together with the dried cranberries. - Resting time:
After cooking, switch off the oven, cover the roast with aluminum foil
and leave to rest for 20 minutes. - Side dish vegetables:
Prepare the vegetables while the roast is resting: Blanch the broccoli and beans in salted water for 2-3 minutes,
then add the sugar snaps and peas and cook for 2 minutes.
Drain the vegetables and toss in a pan with butter, lemon juice, lemon zest and rosemary. - Cranberry red wine sauce:
Remove the roast and vegetables from the roasting tin. Place the roasting pan on the stove, stir in
flour, deglaze with red wine and allow to boil down briefly.
Then add the beef stock and cranberry sauce and simmer for a few minutes.
🍷 Serving suggestion
Slice the roast and serve with the oven vegetables and the cranberry red wine sauce.
A strong red wine or homemade mashed potatoes go perfectly with it.
