{"id":6590,"date":"2025-11-28T08:00:13","date_gmt":"2025-11-28T07:00:13","guid":{"rendered":"https:\/\/www.schlosspassage.com\/recipe-roast-beef-with-cranberries\/"},"modified":"2025-11-24T23:29:03","modified_gmt":"2025-11-24T22:29:03","slug":"recipe-roast-beef-with-cranberries","status":"publish","type":"post","link":"https:\/\/www.schlosspassage.com\/en\/recipe-roast-beef-with-cranberries\/","title":{"rendered":"Recipe Roast beef with cranberries"},"content":{"rendered":"<section class=\"rezept metzgerei-bauch\">\n<header>\n<h1>Festive roast beef with cranberry sauce and winter vegetables<\/h1>\n<p><strong>A recipe from the Bauch butcher&#8217;s<br \/>\n<a href=\"https:\/\/www.schlosspassage.com\/wp-content\/uploads\/Rezept-bauch-download.pdf\" target=\"_blank\" rel=\"noopener\">Download now<\/a><\/strong><\/p>\n<\/header>\n<article>This aromatic roast beef is a real treat for festive occasions.<br \/>\nTender meat of the best quality meets fruity cranberries, fresh vegetables<br \/>\nand a fine red wine sauce &#8211; a dish that brings warmth and enjoyment to the table.<\/p>\n<h2>\ud83d\uded2 Ingredients (for 8 portions)<\/h2>\n<ul>\n<li>1.5 kg <strong>beef balls<\/strong> (from our Bauch butcher&#8217;s shop)<\/li>\n<li>2 kg potatoes<\/li>\n<li>10 small carrots<\/li>\n<li>3 onions<\/li>\n<li>2 garlic bulbs<\/li>\n<li>2 tbsp olive oil<\/li>\n<li>Salt &amp; pepper<\/li>\n<li>1 packet of fresh herbs<\/li>\n<li>50 g dried cranberries<\/li>\n<li>1 clementine<\/li>\n<li>1 tsp flour<\/li>\n<li>200 ml red wine<\/li>\n<li>200 ml beef stock<\/li>\n<li>4 tbsp cranberry sauce<\/li>\n<li>1 broccoli<\/li>\n<li>1 pack of green beans<\/li>\n<li>1 packet of mangetout<\/li>\n<li>100 g peas<\/li>\n<li>20 g butter<\/li>\n<li>1 untreated lemon<\/li>\n<li>1 sprig of rosemary<\/li>\n<\/ul>\n<h2>\ud83d\udc69\u200d\ud83c\udf73 Preparation<\/h2>\n<ol>\n<li><strong>Preparing the roast:<\/strong><br \/>\nTake the meat out of the fridge 30 minutes before roasting and tie evenly with kitchen string.<br \/>\nPreheat the oven to <strong>230 \u00b0C (top\/bottom heat).<\/strong><\/li>\n<li><strong>Prepare the vegetables:<\/strong><br \/>\nPeel the potatoes and carrots and cut into pieces.<br \/>\nHalve the onions and garlic and place everything in the roasting tin. Season with salt and pepper.<\/li>\n<li><strong>Prepare the roast:<\/strong><br \/>\nPlace the piece of beef on the vegetables, drizzle with olive oil, season and place in the oven for <strong>15 minutes<\/strong>.<br \/>\nThen lower the temperature to <strong>200 \u00b0C<\/strong> and bake to the desired degree of doneness:<\/p>\n<ul>\n<li><em>1 hour<\/em> for medium (core temperature 65-70 \u00b0C)<\/li>\n<li><em>1.5 hours<\/em> for fully cooked<\/li>\n<\/ul>\n<\/li>\n<li><strong>Flavoring:<\/strong><br \/>\nAfter 30 minutes, roughly chop the herbs, slice the clementine<br \/>\nand add both to the roast together with the dried cranberries.<\/li>\n<li><strong>Resting time:<\/strong><br \/>\nAfter cooking, switch off the oven, cover the roast with aluminum foil<br \/>\nand <strong>leave to rest for 20 minutes<\/strong>.<\/li>\n<li><strong>Side dish vegetables:<\/strong><br \/>\nPrepare the vegetables while the roast is resting: Blanch the broccoli and beans in salted water for 2-3 minutes,<br \/>\nthen add the sugar snaps and peas and cook for 2 minutes.<br \/>\nDrain the vegetables and toss in a pan with butter, lemon juice, lemon zest and rosemary.<\/li>\n<li><strong>Cranberry red wine sauce:<\/strong><br \/>\nRemove the roast and vegetables from the roasting tin.
